Humans and Technology Equal Better Tomatoes

There are few things that taste better than a fresh tomato which has been hand-picked from farmer’ basket.  That’s because most of us have a pretty good idea for the perfect vegetable.  Unfortunately, we get most of our tomatoes at the supermarket and they have been chosen for us using a professional tomato sorter and other processing equipment.  This may not seem like an improvement over farm vegetables, but the fact is that commercial processing is probably more sanitary and accurate than even our discerning eye.  Tomatoes are usually sent to a plant which can clean, sort, and grade them quickly.  In some cases people are assigned to cull the tomatoes one more time, to ensure only the best get to market.  The result is that we are now getting the best of all worlds.
